make the raisin verjus

1 cup raisins (preferably Red Flame)

1 cup red verjus

¼ cup red wine

¼ cup water

1 Tbsp grapeseed oil

1 tsp kosher salt

4 turns freshly ground black pepper

Combine the raisins, verjus, and wine in a small saucepan and bring to a simmer over medium heat. Transfer the mixture to a blender, add the water, grapeseed oil, salt, and pepper and blend on high speed until completely smooth. If not using immediately, transfer to an airtight container and store in the fridge for up to 3 days.
